Olive Oil

"A Zinzalla" is a variety of olives which flourishes both close to the coastline and to the mountains, we find it directly in Sant'Armettu on rather granitic arenas but also in Bicchisano on richer clay grounds. Thanks to a ripe fruit, picked on nets, it produces a black fruity oil, with gourmand hazelnut aromas.

In Corsican, this literally means  "foam". Spuma has a tendency to be a "fruity, not ripe" oil. Rather raging, it releases intense flavours of almond and artichoke.The marine ocean sprays rocking the coastline olive trees all year long characterize the unique savor of this fresh and natural oil.

Olealta

At the feet of the mountains, some wonderful centenary olive trees stretch their highest branches in the direction of the sun. Once ripened, the olives fall by themselves in the net during the picking and later, offer a sweeter oil, with delicious aromas of hazelnut.Rather "fruity, ripe", Olealta acts like a real flavour enhancer. It is a gourmet and refined oil which magnifies each course from the fish to the cheese, and reserves a lot of surprises to the fine gourmets.
